Broccoli burger with chicken

The whole family will love it (even those that do not like broccoli 🤩🥦).


You need

Broccoli buns
0.5 broccoli head
115 g egg whites
3 tbsp almond flour
1 tsp baking powder
0.5 dl oats
A pinch of salt
The bun is served with
120 g chicken breast, cooked
3 lettuce leaves
1 tomato, sliced
0.25 fresh onion, sliced
50 g cucumber, sliced
0.5 avocado, mashed
3 tbsp skyr mixed with 0.5 clove of pressed garlic, 1 tbsp ketchup, and a pinch of salt

How to

Preheat the oven to 180 °C

Cut the broccoli head into small pieces and place in a bowl. Pour boiling water over it and leave to stand for 3 minutes. Drain the water and blend the broccoli until you reach an even consistency.

Mix the broccoli together with the remaining ingredients in a bowl (if the dough is too wet, add a little more oatmeal).

Shape the mixture into even sized buns and place them on a baking tray lined with baking paper.

Brush the buns with egg whites and possibly sprinkle some sesame seeds on top.

Bake the buns for about 25 minutes at 180 °C.

Broccoli buns can of course go really well with other types of burgers such as beef, fish, etc. They also taste excellent with different varieties of meatballs.
